 Igrew up in the era of “an apple a day keeps the doctor away.” In our household,
     we ate apples sliced, diced, dipped in peanut butter, as apple sauce and in pies.
Apple pie is one of my all-time favorites. When Poet decided to eat less
  processed foods and we were challenged to stay home during the pandemic and re-create all our favorite dishes that were no longer available to us, I decided to try to reinvent one of my fondest
childhood favorites. This time,

Filling ingredients:
• 3 medium apples (Envy, Golden Delicious or Pink Lady),
peeled, cored and sliced into 1/2-inch pieces
• 3 ripe pears, peeled, cored and sliced into 1/2-inch pieces • 1 teaspoon lemon juice
• 2 teaspoons cinnamon
Topping ingredients:
• 1 cup old-fashioned oats
• 1/2 cup gluten-free all-purpose flour
• 1/2 cup chopped pecans or walnuts (optional) • 1/4 cup honey or maple syrup
• 1/4 cup coconut oil or grapeseed oil
• 2 teaspoon ground cinnamon
• 1/4 teaspoon fine-ground salt
Directions: Preheat oven to 350 degrees. Fill baking tray or glass pie dish with sliced apples and pears. Add lemon juice, and sprinkle with cinnamon. To prepare crumble, combine oats, flour, honey, coconut oil, pecans, cinnamon and salt in a large bowl, and use hands to loosely crumble over apples and pears
Bake for 1 hour, or until apples are tender and topping is light, golden and crisp. Serve with fresh whipped cream.

     however, it was apple pie with a twist: free of gluten and refined sugar, and with the addition of pears for sweetness.
