COLD NOODLE SALAD WITH DASHI SAUCE
Ingredients:
• 3 1/2 ounces dried saimin/ramen noodles • 1 pack dashi
• 1 3/4 cups water
• 1 stalk green onion, cut small
• 1/2 clove garlic, chopped small
• 2 tablespoons fennel, shaved, for garnish
• 2 tablespoons radish, shredded, for garnish • 1/4 cucumber, sliced thin, for garnish
• sprinkle sesame seeds, for garnish
• 4 pea shoots, for garnish

Members can run for the cooperative’s board by submitting a completed member petition with the signatures of at least 35 members (electric account holders) in good standing by 4 p.m. on December 29, 2021.

Directions:
Cook noodles per bag instructions, then drain.
Pour water into a bowl. Add dashi, green onion and garlic to water, and mix well.
Split dashi between
bowls. Add cooked/drained noodles to dashi. Add shaved fennel, shredded radish, sliced cucumbers, pea shoots, sesame seeds and protein as garnish, if desired.
