    Eggs are delicious and nutritious. They are of- ten referred to as one of the most complete foods on the planet if eaten whole because they contain almost every essential nutrient.

 Our avocado toast can
be modified to meet your
fancy by adding your fa-
vorite seasoning, sliced
heirloom tomatoes or a
balsamic vinegar glaze.
We, however, decided
to keep the recipe simple
and pack it with powerful nutrients to keep you and your keiki satiated all morning.
 What kid doesn’t like a mini version of their other- wise boring salad greens? Give it a try. This breakfast is sure to please.
AVOCADO TOAST WITH FRIED EGG

 Ingredients:
• 1 whole egg or 2 egg
whites
• 1 slice of whole-grain
bread
• 1/2 ripe avocado
• 1 tablespoon Poet’s
Directions:
Cook the egg to your liking. Poet loves egg whites cooked flat like an omelet.
Toast the bread. Then, spread 1 tablespoon of Poet’s Presto Pesto on bread (optional).
Mash your avocado right in the skin and season with a dash of Hawaiian salt and lemon pepper.
Presto Pesto (optional)
• dash of Hawaiian salt
• dash of lemon pepper • 1 pinch of microgreens • 1 tablespoon shredded
Parmesan cheese
• Spread mashed avocado on top of pesto, and then lay cooked egg on top. Finally, pile on the microgreen
and fresh grated Parmesan cheese.
